“glass/cellophane noodles”

Place glass noodles in a large bowl, cover with hot tap water & soak for about 15 minutes.
They will soften. Using a pair of kitchen shears, cut the noodles into pieces & strain off the water. Use immediately.

Simple Spicy Peanut Sauceimage011

  • 1-inch piece ginger, peeled
  • 1 garlic clove, peeled
  • ½ c. chunky peanut butter
  • 2 tbsp. soy sauce
  • 1 tbsp. fresh squeezed lime juice
  • 1 teaspoon brown sugar
  • ½ tsp. Yuzu Pao Sriracha

In a blender or small food processer, add the ginger and garlic clove. Pulse to roughly chop. Add the peanut butter, soy sauce, lime juice, brown sugar, Yuzu Pao Srirach and about ¼ cup of water. Blend, adding more water as required to thin, until smooth. Serve at room temperature with your salad rolls.
